My month-long stay in Korea two summers ago was a mixed bag for me for a multitude of reasons, but when I wasn’t at a Buddhist temple eating a Korean-style vegan diet [kimchi + rice, day in and day out] I was in Seoul and Busan eating some of the best food of my life. Today’s Highlights will feature some of the things I ate while in the country of my ancestors. Enjoy!
